Chicken Scampi (copy cat of Olive Garden)

My family and I love Olive Garden and one of our favorite dish is the Chicken Scampi.
Paying close attention to the ingredients and reading the description on the menu. I decided
to make it at home.  This is what I came up with using all organic ingredients.

Prep:
Slice up three colors of peppers thin
Slice up the chicken breast thin and into bite size pieces
Gather spices, salt and pepper.
Grate the Cheese
Boil the noodles

*Serve with bread of your choice
*Serve with a salad

Simply Farmhouse Chicken Scampi (copy-cat of Olive Garden)



1 box of angel hair pasta (cook as directed)
1-2 chicken breast (cut thinly and into bite size)
3 peppers  three colors of your choice (sliced thin)
1 1/2 cups of heavy cream ( I use half and half)
White cheddar block cheese (grated)
1/4 to 1/2 tsp cumin (or to taste)
1/4 to 1/2 tsp chili pepper (or to taste)
1/2 tsp salt
pepper (to taste)
2-3 TBSP of butter or little more I won't tell πŸ˜‰


1. Cook chicken in butter in a iron skillet until almost done, add all your peppers, spices, salt and peppers. Stir well.

2. Bring the water to a boil and place in your pasta. (cook accordingly to direction on box)

3. Once the pepper and chicken are tender add the heavy cream and one cup of cheese...mix well and
reduce to heat to low.

4. Drain the pasta and serve on plates. Next add the Chicken Scampi mix over the pasta.

5. Top each dish with more cheese and serve.

Serves 4-6

Georgia Peach Pound Cake

HI!  Today, I wanted to shared one of our family favorite dessert with you. If you love southern cooking, this cake is one that you will want to try.  It is filled with peaches and icing made with the peaches juice.  Made with very basic ingredients that you most likely have in your pantry.

*Sugar *Flour *Butter * Peaches * Vanilla * Confection Sugar *Salt *Eggs

Georgia Peach Pound Cake
Simply Farmhouse Kitchen

1 cup of butter (real-softened)
2 cups of sugar 
4 eggs (add 1 in at a time, stir each one)
1 tsp vanilla
3 cups of All Purpose Flour (reserve 1/4 cup) Shifted
1 tsp baking power
1/2 tsp salt
2 cups fresh or can peaches  (not pie filling) reserve the juice

Preheat oven 350*

:Butter a 10 inch tube pan. 
:In a large bowl cream together butter, and sugar until light and fluffy.
:Add eggs one at a time and stir each one. (beat well)  
:Stir in vanilla. 
:Reserve 1/4 cup of flour to coat peaches, shift together the remaining flour, baking
power, and salt.  *No, no do not skip the step to shift your flour, this is what makes it fluffy.πŸ˜‰
:Gradually stir the flour mixture into the butter mixture. 
:Use the reserved flour and coat the peaches, next fold the peaches into the batter. Spread the batter evenly into the pan.
:Bake 60-70 mins. Test with toothpick. Allow cake to cool for 15 mins before inverting it on a plate.

ICING:
Mix a little of the peach juice with confection sugar to make the icing.  Keep adding one or the other until you get the right consistence. (thickness) Drizzle on the cake when it is cool.

**While the cake is cooling in the pan you can pour a little peach juice around on the cake. Just enough to add a little favor and little more moister.

Simply Farmhouse Super Salad 

 Romaine Lettuces
 Leafy Green lettuces
 Spinach
 Cilantro  (it great for detoxing your body)

5 Farm Fresh eggs (hard boil~ for protein)
 Sprouted Lentil Trio

1 tbsp of Chia Seeds
1/2 - Cup of slice Almonds

1 cup of carrots peeled and grated
1/2 or 1 cup of celery stringed and chopped
1  cucumber diced
1/2 cup of onions diced
1/2 cup  of  raisins
handful of grapes
1  tomato diced
1  green bell pepper diced
slice almonds or any nuts (hand-ful)

Organic Caesar Croutons
1 cup of  cheddar cheese

Toss and enjoy!

Simply Farmhouse Homemade Pizza Dough

 Our family loves homemade pizza nights. I have tried many pizza dough recipes and decided to come up with one on my own.  This recipe is simple and easy to follow.  Just simply be creative with your pizza toppings. Such as buffalo chicken pizza, veggie pizza, cheese to name a few.

 Simply Farmhouse Homemade Pizza Dough

1 TBSP of Honey
1 Package of  Active Yeast
1 cup of warm water 105 - 110 degrees

Combine honey and yeast in water allow to proof for 10 minutes.

 3 cups of all purpose flour  I like to shift mine into a med-bowl
I then sprinkle Red Crush pepper, and garlic powder in the flour for favor in the dough,Stir well

Pour proof yeast mixture into the flour combine well.

Place dough unto a flour surface and knead for 10 minutes until smooth.
Coat with a little olive oil and place in a bowl, in a warm place ~ let rise for 1 hour.

After the dough has risen , roll out on your pizza pan. Pinch up the sides to hold your
ingredients.  Bake on 350 degrees for 10 mins.

Add all your favorite toppings, bake another 10 minutes on 350 degrees. Bake until the cheese has melted.

Coffee Cake

This coffee cake is our family favorite.
Every Sunday morning I will have a coffee cake ready with a cup of hot coffee. 
It is easy to make and so delicious!

Simply Farmhouse Cinnamon Coffee Cake

2 TBSP butter softened
1/2 cup of sugar
1/2 tsp salt
1 egg
2/3 cup of milk
1tsp vanilla extract

1-1/2 cups of all-purpose flour
1 TBSP baking power

In a small mixing bowl, beat butter,sugar,salt until crumbly.
Add egg, milk and vanilla; mix well.

Combine flour and baking powder add to the butter mixture.
(* I add a little cinnamon to this batter..not sure how much I just
 sprinkle it across and mix in. )
Spread the batter out into a rectangle baking dish. It will be spread out
very thin.

Topping:
1/2 cup of Brown sugar
1/4 cup of all purpose-flour
1/4 cup of cold butter
1 TBSP  of  ground cinnamon
1/2 cup of chopped pecans

Combine all in a small bowl until crumbly. Sprinkle over the batter.
Bake at 350 degrees for 25 - 27 minutes. Test with a toothpick to see
if center  is done.

Cool for a few minutes , it will help it from falling apart while serving.
 * Optional you can top it with a powered sugar glaze if you like.

ENJOY ~ Simply easy to make and it yields 8-9 servings.

Creamy Chicken Noodle Soup





Simply Farmhouse  Creamy Chicken Noodle Soup
5-6 servings.

2 cups of any type of pasta noodles. ( cooked & drained)
3 Tablespoons Butter
 1/2 cup diced onions
1 cup thinly chopped carrots
1 cups thinly chopped celery
3 minced garlic cloves
3/4 tsp pepper
3/4 tsp salt or to taste
1/2 tsp dried crushed Basil
1/2 tsp dried crushed parsley
2 cups BONE Broth  (very good for you)
1 & 1/2 cups half and half
1 & 1/2 cups milk
2 cups of cooked chicken diced. ( I stir fry mine with the butter and veggies.)
1 can organic cream of chicken soup.
1/2 cups fresh grated Parmesan  (op)

1.Cook the pasta  noodles drain and rinse.
2. In a skillet on med heat, melt the butter and stir fry the garlic, celery, carrots,onions, chicken.
add  pepper, salt, basil, parsley.  Stir and cook until the chicken is no longer pink. And veggies are tender.
3. In a soup pot, transfer the pasta noodles, chicken -veggie mixture. Add chicken broth, milk and half & half , cream of chicken, cheese. Bring to a boil, After it reaches boiling point turn the soup on low heat and let it simmer while stirring occasionally. Serve with crackers, or homemade bread.

Simply Farmhouse Banana Cupcakes with Cinnamon Icing

Watching our grandson one afternoon I heard a noise in the kitchen. When I peeked within, the grandson where biting off the heads of the cupcakes and licking the icing off the other ones. When they looked up to see me, they quickly tossed the banana cupcakes in to the cover lid of the cake holder. There eyes where big and cupcake icing covered their faces. The oldest grandson Wyatt jumped down from the bar and said "Walker did it."  I could not stop laughing at these boys.  The cupcakes have their approval on them that is for sure.  I just wished I got a picture of them.

Banana Cupcakes with Cinnamon Cream Icing

Preheat the oven for 350 degrees. Place muffin liners
in the muffin pan.

Batter:
1 1/2 cups of flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Mix well in a bowl

4 ripe bananas mashed
1/2 cup of unsalted butter melted
2 large eggs beaten
1/2 tsp vanilla extract

Mix together in another bowl, then mix this in to the flour mixture.
Do not over mix. spoon batter into muffin liners.

Bake for 25- 28 mins.

Cinnamon Cream Icing:
1 stick of butter slightly softened
3 cups of powdered sugar
2 tsp of vanilla extract
1 1/2 tsp of cinnamon

In the bowl of an electric mixer, beat the butter, next add the powered sugar until smooth.
Then add the vanilla and cinnamon.

Simply Farmhouse Healthy Nacho's







 



Simply Farmhouse Mexican Rice:

3-4 TBSP of Organic Extra Virgin Olive Oil
1 cup of  organic rice
1/4 cup of chopped onions
2 organic garlic cloves chopped
1 garlic powder
 1/4 tsp of  sea salt

Add oil, onions  and garlic in a sauce pan cook under tender. Next add the rice and cook on med/med low heat until the rice is puffed and golden about 2-3 minutes. Stirring constantly don't let it burn.

#2 add these seasonings in and stir well.
1 tsp of organic cumin
1/2 tsp of chili powder

#3 add in and bring to a boil
 1/2 cup of organic tomato sauce ( you can freeze the left over sauce for next time)
 2 cups of organic chicken broth.

After it comes to a boil reduce heat to LOW and cover for 20 mins or less until the rice is soft. Stirring from time to time so it want stick to the pan. Remove the  lid and stir to fluff.
 Set aside and keep warm we will use this on the nacho's.

Simply Farmhouse Healthy Organic Nachos 

A bag or two of Organic Tortilla chips 
2 cans or Organic Black Beans (replaces meat)
Simply Farmhouse Mexican Rice (see recipe )
1 organic green pepper
1 organic red pepper
1 organic yellow pepper
1 med organic onion
Seasoning: Organic cumin, chili powder, garlic powder, sea salt.
The best ingredient nacho cheese you can find
or make your own even better.

Heat the beans and keep warm, Make the SF Mexican rice and set aside,  Stir fry peppers
and onions add the seasoning to taste. Warm up the cheese and add a little milk to stretch it..
Layer and serve.  This will serve about  4.   For a larger family your need to double all of this.

Chocolate Pudding Cake

My husbands grandmother Della was an old fashioned country cook.  This was one of her amazing desserts.  If you are in the mood for something very chocolate and very sweet. Then you will love this chocolate pudding cake.  When you first make it you may think it is odd to pour water all over the dry batter before placing it in the oven.  It sounds crazy, but the water poured over the dry batter (no stirring) makes the pudding.    Beware! It is hard to stop at one piece.

Simply Farmhouse Chocolate Pudding Cake

3/4 c. sugar
1 c. flour ( all-purpose)
1/2 tsp salt
2 tsp baking power
2 Tbsp cocoa

1/2 c. milk
3 Tbsp melted butter
1 tsp vanilla

Lightly oil an 9 inch square dish or pan. Mix all dry ingredient
right in the dish. Next add the milk, butter, vanilla stir well and spread
out evenly.

Topping:

1/2 cup sugar
1/2 cup of brown sugar
1/4 cup of cocoa
Mix all the DRY and pour this dry mix, evenly over the cake batter.

Next take  1- 1/2 cup of water
Pour the water over ALL over the cake ~ do not stir.

Bake in the oven for 40 mins  at 350 degrees

Simply Farmhouse Strawberry Freezer Jam

4 1/2 Cups of Crush Strawberries  ~ make sure it is 4 cups of crush strawberries not 4 of berries.
1 1/2 cup of sugar
1 pkg.  SURE-JELL freezer jam Fruit Pectin

 
Mix and Label into jelly jars (make sure the jars and lids are clean so give
them a bath) Let it set out for 30 mins to jell up and Freeze
