Simply Farmhouse Healthy Nacho's







 



Simply Farmhouse Mexican Rice:

3-4 TBSP of Organic Extra Virgin Olive Oil
1 cup of  organic rice
1/4 cup of chopped onions
2 organic garlic cloves chopped
1 garlic powder
 1/4 tsp of  sea salt

Add oil, onions  and garlic in a sauce pan cook under tender. Next add the rice and cook on med/med low heat until the rice is puffed and golden about 2-3 minutes. Stirring constantly don't let it burn.

#2 add these seasonings in and stir well.
1 tsp of organic cumin
1/2 tsp of chili powder

#3 add in and bring to a boil
 1/2 cup of organic tomato sauce ( you can freeze the left over sauce for next time)
 2 cups of organic chicken broth.

After it comes to a boil reduce heat to LOW and cover for 20 mins or less until the rice is soft. Stirring from time to time so it want stick to the pan. Remove the  lid and stir to fluff.
 Set aside and keep warm we will use this on the nacho's.

Simply Farmhouse Healthy Organic Nachos 

A bag or two of Organic Tortilla chips 
2 cans or Organic Black Beans (replaces meat)
Simply Farmhouse Mexican Rice (see recipe )
1 organic green pepper
1 organic red pepper
1 organic yellow pepper
1 med organic onion
Seasoning: Organic cumin, chili powder, garlic powder, sea salt.
The best ingredient nacho cheese you can find
or make your own even better.

Heat the beans and keep warm, Make the SF Mexican rice and set aside,  Stir fry peppers
and onions add the seasoning to taste. Warm up the cheese and add a little milk to stretch it..
Layer and serve.  This will serve about  4.   For a larger family your need to double all of this.

After mowing I rake up all the grass clippings to use in my garden.






Adding the grass clippings right on the garden soil.

Along with some veggie scrapes.

Till it all under...composting with yard clippings.

Chocolate Pudding Cake

My husbands grandmother Della was an old fashioned country cook.  This was one of her amazing desserts.  If you are in the mood for something very chocolate and very sweet. Then you will love this chocolate pudding cake.  When you first make it you may think it is odd to pour water all over the dry batter before placing it in the oven.  It sounds crazy, but the water poured over the dry batter (no stirring) makes the pudding.    Beware! It is hard to stop at one piece.

Simply Farmhouse Chocolate Pudding Cake

3/4 c. sugar
1 c. flour ( all-purpose)
1/2 tsp salt
2 tsp baking power
2 Tbsp cocoa

1/2 c. milk
3 Tbsp melted butter
1 tsp vanilla

Lightly oil an 9 inch square dish or pan. Mix all dry ingredient
right in the dish. Next add the milk, butter, vanilla stir well and spread
out evenly.

Topping:

1/2 cup sugar
1/2 cup of brown sugar
1/4 cup of cocoa
Mix all the DRY and pour this dry mix, evenly over the cake batter.

Next take  1- 1/2 cup of water
Pour the water over ALL over the cake ~ do not stir.

Bake in the oven for 40 mins  at 350 degrees

Simply Farmhouse Strawberry Freezer Jam

4 1/2 Cups of Crush Strawberries  ~ make sure it is 4 cups of crush strawberries not 4 of berries.
1 1/2 cup of sugar
1 pkg.  SURE-JELL freezer jam Fruit Pectin

 
Mix and Label into jelly jars (make sure the jars and lids are clean so give
them a bath) Let it set out for 30 mins to jell up and Freeze
